High-Fiber Lentil Bowl
Warm lentils, roasted vegetables, grains and herbed yogurt in a balanced bowl.
Cook it step by step
- 1
Before cooking, read every step, measure all listed ingredients and prepare the cookware named by the method. Wash and dry fresh produce, then prepare it to the size described before heating the pan.
- 2
Simmer lentils and farro separately until tender but intact. Keep only small bubbles breaking the surface and begin checking after 26 minutes, stirring often enough to prevent catching and adding hot liquid only if the pan becomes dry.
- 3
Roast sweet potato and broccoli with cumin and olive oil.
- 4
Blend yogurt with lemon, parsley and salt. Stop once or twice to scrape the sides and continue until the mixture is uniformly smooth with no dry spice or fibrous pieces remaining.
- 5
Layer grains, lentils and vegetables in bowls.
- 6
Spoon over yogurt and add toasted pumpkin seeds.
- 7
Rest the finished food for 3–5 minutes where appropriate, taste for final seasoning and serve while its intended crispness, tenderness or temperature is at its best.
Make it work beautifully
- Dress lentils while warm so they absorb seasoning.
- Keep each component distinct for better texture.
